Why is milk from Jersey cattle more easily digestible?
In a glass of real dairy there are two forms of protein called casein and whey. The casein is what creates the difference between regular milk and A2 milk. There are two forms of casein in cow’s milk: A1 and A2 beta-casein. There have been studies that say the A1 beta-casein is harder to digest for some people. The Jersey breed has a high percentage of A2 genes and our Jersey herd all tested A2/A2! A2 milk has shown to help those who have discomfort drinking regular milk.
